Foco Gramatical
Dever + infinitivo — expectativa/norma (não obrigação)
Here "deve/não deve" + infinitivo isn't about strict obligation — it's describing what's expected or normal for a good quality product: "o cheiro não deve ser muito forte, não deve arder" (a well-made cachaça typically has these traits — this is what you should expect to find, not a rule imposed on the drink).
